Stevia for Beverage Applications

Stevia is a sweetener, used as a substitute for sugar. It is subtracted from the leaves of a plant called Stevia Rebaudania. Stevia can be used in powder or liquid form. The active compounds of Stevia, a variety of steviol glycosides , are 250 – 300 times sweeter than sugar, making Stevia a successful substitute for sugar. Stevia is also stable under heat and over a broad range of pH conditions. Stevia is available in different concentrations, varying from RA60% until RA99%.

Since the beginning of the 1970s, Stevia is used in commercial products. It first became popular in Japan. The Japanese used it as a substitute for sweeteners such as cyclamate and saccharin.
