How stevia is manufactured
- Cultivation and harvest: the leaves of Stevia rebaudiana are harvested and dried.
- Extraction: the sweet compounds, the steviol glycosides, are extracted from the leaves with water.
- Purification: the extract is filtered and purified to separate the steviol glycosides from other plant material.
- Crystallisation and drying: the purified glycosides are crystallised or dried into a powder of a defined purity, such as Reb A.
Newer glycosides with a more sugar-like taste, such as Reb M, are produced in smaller quantities in the leaf and are therefore made with additional production steps.
What to look for in a stevia manufacturer
- Purity and glycoside profile: these determine sweetness and taste. Ask for the exact composition, not just a percentage.
- Consistency: every batch should meet the same specification, so your product tastes the same every time.
- Documentation: specifications, certificates of analysis and the documents your quality team needs.
- Food safety: controls on contaminants and microbiology.
- Continuity: enough capacity to support your growth.
